Homemade Granola Recipe
During our volunteer Sunday 'Breakfast and Brainstorm' meeting, Natalie bought in some homemade granola that was absolutely delicious. In fact so delicious we have to share it with all of you...
I N G R E D I A N T S
2 tablespoons coconut oil
125ml maple syrup
2 tablespoons honey
1 teaspoon vanilla extract
300g rolled oats (we used gluten free oats)
50g sunflower seeds
50g pumpkin seeds
50g quinoa (for added protein and crunch)
50g coconut (flakes or desiccated)
100g dried fruit (I used cranberries)
M E T H O D
Preheat the oven to 150C/fan 130C/gas mark 2
Melt the coconut oil and mix with maple syrup, honey and vanilla extract in a large bowl.
Tip in the remaining ingredients - except the dried fruit & coconut - & mix well.
Pour the granola onto two baking trays lined with baking paper or reusable silicone sheets and spread evenly.
Bake for 15 minutes then sprinkle on coconut and dried fruit and bake for a further 10-15 minutes.
Allow the granola to cool and then store in an airtight container for up to a month.
We served ours with coconut yoghurt, fresh fruit and drizzle of honey.
