Vegan Chocolate Cake Recipe

At YogaGlow's first birthday some of you got to try this yummy chocolate cake... and as requested here is the recipe so you can all make it at home! (We want to see photo's when you've made it)

 

I N G R E D I A N T S

300ml coconut milk (or any other dairy free milk)

1 tablespoon lemon juice

150g dairy free margarine (I used Pure - olive spread)

3 tablespoons maple syrup

1 teaspoon instant coffee granules

275g self raising flour

175g granulated sugar

4 tablespoons cocoa powder

1 teaspoon bicarbonate of soda

For the vegan chocolate icing...

75g dairy free margarine

200g icing sugar

4 tablespoons cocoa powder

 

M E T H O D

Preheat the oven to 180C/fan 160C/gas mark 4

Lightly grease two 20cm/8inch round baking pans

Stir the lemon juice into the milk and set aside

In a pan melt the margarine, maple syrup and coffee together

Sieve the flour, cocoa, sugar and bicarbonate of soda into a large bowl

Pour the milk and melted margarine mixture over the flour and stir well to make a smooth batter

Divide the mixture between the two pans and bake for 30-35 minutes or until a skewer comes out clean

Allow the cakes to cool on a wire rack

Meanwhile. make the icing by beating together all ingredients until smooth

When the cakes are completely cooled sandwich together with half the icing and spread the rest on the top of the cake
