Lemon Rice


1 cup Basmati rice

1 lemon

1 cups water

2 tbs oil

1/2 tsp cumin Seeds

1/2 tsp turmeric powder

8– 10 curry leaves

5 – 7 cashew nuts

1 tbs coriander leaves (finely chopped)

1 tbs dry coconut flakes

1 tsp salt

1/2 tsp black pepper powder(optional)

Serves 4-5


  1. Cook the rice in a medium sized heavy bottom pot.

  2. Cover and keep it for 15 – 20 minutes after turning the heat off.

  3. In one large bowl, place the cooked rice in such a way that the grains will get separated easily.

  4. Squeeze a lemon on the rice.

  5. Add salt and mix with spoon.

  6. In a small heavy bottom pan, take oil, heat it on a medium flame.

  7. Add cumin seeds. Wait until they pop.

  8. Add curry leaves, turmeric powder and cashew nuts. Turn off the heat.

  9. Pour this oil + spice mixture on the top of cooked rice.

  10. Mix well with the help of a spoon.

  11. Add 1/2 tsp black pepper powder and ½ tsp of sugar if desired for taste.

  12. Garnish with finely chopped cilantro and dry coconut flakes.
