1 cup Basmati rice
1 cups water
2 tbs oil
1/2 tsp cumin Seeds
1/2 tsp turmeric powder
8– 10 curry leaves
5 – 7 cashew nuts
1 tbs coriander leaves (finely chopped)
1 tbs dry coconut flakes
1 tsp salt
1/2 tsp black pepper powder(optional)
Cook the rice in a medium sized heavy bottom pot.
Cover and keep it for 15 – 20 minutes after turning the heat off.
In one large bowl, place the cooked rice in such a way that the grains will get separated easily.
Squeeze a lemon on the rice.
Add salt and mix with spoon.
In a small heavy bottom pan, take oil, heat it on a medium flame.
Add cumin seeds. Wait until they pop.
Add curry leaves, turmeric powder and cashew nuts. Turn off the heat.
Pour this oil + spice mixture on the top of cooked rice.
Mix well with the help of a spoon.
Add 1/2 tsp black pepper powder and ½ tsp of sugar if desired for taste.
Garnish with finely chopped cilantro and dry coconut flakes.
