Simple Marinated Tofu
250g Plain Tofu cut into 5cm strips
2 tbsp sunflower oil or vegetable oil for roasting
6 tbsp shoyu or 4 tbsps tamari
Half a lemon (for juicing)
Thumb of ginger, grated or chopped fine
1 red chilli, halved and de-seeded, chopped to small pieces
2 tbsp Sesame seeds raw or toasted
Slice the tofu to chucky cubes and spread it out in a roasting dish or marinade dish.
Make up the marinade, pour over the tofu and leave to marinate for 1-6 hours.
Preheat oven to 190.
Spread tofu out in a roasting dish and add oil throughout.
Roast in the oven for 15 minutes until some of the marinade has absorbed in to the tofu.
Continue baking until tofu has a brown crisp. Add oil if the tofu begins to dry.
Variations - to make crispy chip style tofu
2 tbsp corn flour
1-2 tbsp sesame seeds (regular or black or a mix)
1⁄2 tsp chilli flakes (optional)

On a large plate or tray mix together the cornflour, sesame and spices and press the tofu in the spice mix.
Heat a large frying pan and add approximately 3 tablespoon of oil and heat until hot, test to see if it is hot enough by adding a tiny piece of tofu. It should sizzle and bubble, turning brown quickly.
Carefully add a single layer of tofu. Fry in two batches if necessary rather than overfilling the pan.
Fry the tofu on one side until golden and then carefully turn the tofu over and cook until golden on crispy all over.
If you haven’t got time to marinade or roast, just slice up plain tofu and fry directly with a little oil, chopped ginger and chilli and a good splash of tamari or shoyu, and a little lemon for the zing!
