Simple Sabji


3 medium size zucchini

1 cup of diced carrots

1/4 tsp fenugreek seeds or leaves

1/4 tsp nigella seeds

1/4 tsp cumin seeds

1/4 tsp mustard seeds

1/4 tsp fennel

2 tbsp oil or ghee

¼ teaspoon turmeric

1/2 teaspoon salt

1 small lemon

one teaspoon jaggery

one cup water

Fresh chopped cilantro

Serves 4-5


  1. Heat oil in a nonstick pan.

  2. Add mustard seeds and wait until they pop.

  3. Then add cumin, fenugreek, fennel and nigella seeds..

  4. Add carrots and sauté on medium heat until tender

  5. Then add zucchini, adding water as necessary.

  6. Cook for around ten minutes or until vegetables are tender.

  7. Add salt and jaggery.

  8. Make sure jaggery is completely dissolved.

  9. Add lemon juice and stir.

  10. Garnish with cilantro.
